Lobster Mac & Cheese with Truffle Oil
Contrary to what we Americans believe, macaroni & cheese was not invented by Kraft and has not always come in a box.
I'll give you a moment to get over the trauma, then we'll continue ...
Exactly where good ol' mac & cheese came from is unknown, but it's believed that the dish has its origins in Italy (this makes sense: pasta, cheese sauce, a no-brainer if you think about it) in the 14th century after Marco Polo returned from the orient with macaroni. And it first became popular in the United States after Thomas Jefferson served it at the White House.
Macaroni & cheese has evolved from its Italian origins to American boxed staple and is now a gourmet dish, with some of the very best examples being prepared by some of the world's very best chefs.
(I typically add a little garlic powder, extra virgin olive oil, some Mrs. Dash, frozen sweet peas (boil with the pasta) and sweet Italian sausage -- and always, always extra cheese; Fontina is my current favorite.)
This is attributed to the dish's versatility. A dish consisting of only pasta and cheese sauce begs to be experimented with. The directions on the box are now viewed as the starting point. Where you take the dish after that is limited only by your own imagination. Spices, cheeses, vegetables, meats ... even fruits. All can be experimented with.

Ingredienti
- 1 pound lobster meat
- 2 tablespoons grapeseed oil
- 1 pound dried macaroni pasta
- 1/2 cup sweet cream butter (1 stick)
- 1 cup chopped white onion
- 2 cloves chopped garlic
- 1/2 cup all-purpose flour, or as needed
- 2 bay leaves
- 1 cup fish stock
- 1/2 cup heavy cream
- 2 cup shredded sharp Cheddar cheese (or extra-sharp if desired)
- Salt (to taste)
- White pepper
- 2 or 3 tablespoons white truffle oil
- 1/4 cup chopped fresh chives
Direzioni
Bring a pot of water to a boil for the pasta. Saute the lobster meat in oil until it is no longer translucent, and set it aside. Cook the pasta until al dente (firm) and drain well so that you don't have excess water -- which can dilute the flavor.
While the pasta is cooking, melt the sweet cream butter in a large saucepan over medium heat, and add the onion and garlic, cooking until translucent, but be careful not to burn it. Add the flour a little at a time to make a roux. Do this gradually because some batches of flour absorb more than others and you may not need as much.
Add the bay leaves, and then incorporate the fish stock a little at a time to form a smooth sauce. Simmer this for a least 10 minutes to allow the flour to "cook out," then remove the bay leaves.
Add the heavy cream and sharp Cheddar, then lightly season with salt and white pepper.
Stir the lobster meat into the cheese mixture, then fold in as much pasta as you need to acquire that "just right" consistency for macaroni and cheese. Transfer to a serving bowl and drizzle sparingly with truffle oil. Garnish with chopped chives.

It's a spreadable cheese. Delicious, especially on Wheat Thins Artisan crackers! It's in the gourmet cheese/deli section of all stores, but not expensive. Try it, you'll be hooked forever!

Wow! That is some high class macaroni and cheese. I will have to agree the best Mac and Cheese does not come from a box. My wife's grandmother has a great recipe for baked mac and cheese. I keep meaning to get the recipe. This recipe sounds great. Unfortunately I don't like lobster. But, my wife would love it so maybe I will make it for her sometime.
